Veggies for All!
Vision
We wanted a project that would involve our whole Eco Club (60 students) and be something that would have a lasting impact. We looked at food sustainability and availability. We decided that we would purchase materials to plant a salad garden that the Eco Reps could take home and plant there.
Action
We wanted to make this project as easy and inexpensive as possible. After much online searching and discussion we decided to use egg cartons as plant starters. This was a way to re-use something, was easy to collect , cost nothing, was portable and could be planted in the ground. We put out a call for egg cartons from our school community and received many. Using our grant from LSF we were able to puchase soil and seeds. We chose lettuce, cucumber and tomato so that you could make a salad from what you grew. We had our Eco reps come at recess and plant their seeds in an egg carton at our outdoor classroom. Eco Reps took them home to water and plant into their own vegetable gardens. We shared information on gardening, producing your own food and the environmental impact.
